4 " As he bit into the oily green flesh, Fairchild couldn't have known he was holding in his hands the future crop of the American Southwest. But he had a hunch. It was a black-skinned fruit, a variety of alligator pear, or as the Aztecs called it, "avocado," a derivative of their word for testicle. It grew in pairs, and had an oblong, bulbous shape. The fruit had the consistency of butter and was a little stringy. But unlike the other avocados he had tasted farther north, in Jamaica and Venezuela, this one had remarkable consistency. Every fruit on the tree was the same size and ripened at the same pace, rare qualities for anything that grew in the consistent warmth of the subtropics.
In Santiago, where a boat had deposited Fairchild and Lathrop, the avocado had an even greater quality. Fairchild listened intently as someone explained that the fruit could withstand a mild frost as low as twenty-three degrees Fahrenheit. Such a climatic range suggested a perfect crop for America. From central Mexico, the worldwide home of the first avocados, centuries of settlers had carried the fruit south to Chile. David Fairchild mused about taking it the other way, back north. "A valuable find for California," he wrote. "This is a black-fruited, hardy variety."
Lathrop tagged along on the daytime expedition when Fairchild tasted that avocado. He agreed that a fruit so hardy, so versatile, would perfectly answer farmers' pleas for novel but undemanding crops, ones that almost grew themselves, provided the right conditions. Fairchild didn't know the chemical properties of the avocado's fatty flesh, or that a hundred years in the future it would, like quinoa, find esteem, owing to its combination of fat and vitamins. But he could tell that such a curious fruit, unlike any other, must have an equally curious evolutionary history. No earthly mammal could digest a seed as big as the avocado's, and certainly not anything that roamed wild through South America. "

5 " Of all the countries Fairchild had visited, Japan struck him as the most advanced on matters of horticulture. He learned about Japanese miniature gardens, the art of Japanese papermaking, and the superior qualities of Japanese fruits and vegetables that didn't grow anywhere else in the world. Wealthy people introduced him to foods of affluence, like raw fish, seaweed, and a bean cheese they called tofu. He thought it impossible to eat with two narrow sticks held in one hand, but after a few tries, he got the feel for it.
It was in Japan that Fairchild picked up a yellow plum known as a loquat and an asparagus-like vegetable called udo. And a so-called puckerless persimmon that turned sweet in sake wine casks. One of the most unrecognized discoveries of Fairchild, a man drawn to edible fruits and vegetables, was zoysia grass, a rich green lawn specimen attractive for the thickness of its blades and its slow growth, which meant it required infrequent cutting.
And then there was wasabi, a plant growing along streambeds in the mountains near Osaka. It had edible leaves, but wasabi's stronger quality was its bitter root's uncanny ability to burn one's nose. Wasabi only lasted in America until farmers realized that its close relative the horseradish root grew faster and larger and was more pungent than the delicate wasabi (which tends to stay pungent only fifteen minutes after it's cut). 6 " In the thousands of years before European colonists landed in the West, the area that would come to be occupied by the United States and Canada produced only a handful of lasting foods---strawberries, pecans, blueberries, and some squashes---that had the durability to survive millennia. Mexico and South America had a respectable collection, including corn, peppers, beans, tomatoes, potatoes, pineapples, and peanuts. But the list is quaint when compared to what the other side of the world was up to. Early civilizations in Asia and Africa yielded an incalculable bounty: rice, sugar, apples, soy, onions, bananas, wheat, citrus, coconuts, mangoes, and thousands more that endure today.
If domesticating crops was an earth-changing advance, figuring out how to reproduce them came a close second. Edible plants tend to reproduce sexually. A seed produces a plant. The plant produces flowers. The flowers find some form of sperm (i.e., pollen) from other plants. This is nature beautifully at work. But it was inconvenient for long-ago humans who wanted to replicate a specific food they liked. The stroke of genius from early farmers was to realize they could bypass the sexual dance and produce plants vegetatively instead, which is to say, without seeds. Take a small cutting from a mature apple tree, graft it onto mature rootstock, and it'll produce perfectly identical apples. Millenia before humans learned how to clone a sheep, they discovered how to clone plants, and every Granny Smith apple, Bartlett pear, and Cavendish banana you've ever eaten leaves you further indebted to the people who figured that out.
Still, even on the same planet, there were two worlds for almost all of human time. People are believed to have dug the first roots of agriculture in the Middle East, in the so-called Fertile Crescent, which had all the qualities of a farmer's dream: warm climate; rich, airy soil; and two flowing rivers, the Tigris and Euphrates. Around ten thousand years before Jesus walked the earth, humans taught themselves how to grow grains like barley and wheat, and soon after, dates, figs, and pomegranates. "

8 " Cook had seen an avocado before, but not like this---so smooth, so green. The fruit took an express route to the greenhouse, where workers propagated the seeds, first in soil, and then suspended slightly in water. Fairchild had included written instructions that only mature trees would fruit, after several years, not months. He advised that as soon as the seedlings grew reasonable roots, they should be shipped to experiment stations in California to be shared with farmers interested in experimental crops.
Cook complied, and then mostly forgot about the avocado.
In California, that single shipment helped build an industry. Other avocados turned up as well, from travelers or tourists who packed the oversized seeds as souvenirs. There were one-off stories that avocados had been spotted in America before, in Hollywood in 1886 or near Miami in 1894. But none were as sturdy as Fairchild's Chilean variety, prized for its versatility, color, and flavor---résumé of strong pedigree. Fairchild's avocado would turn out to be a mix of a Guatemalan avocado and a Mexican avocado and to have been only a short-term tenant in Chilean soil before Fairchild picked it up. But as with most popular fruits, the true geographic origin faded into irrelevance.
Farmers and early geneticists dissected this sample and ones that came after it to create newer cultivars attuned to more specialized climates or tastes. This work yielded a twentieth-century variety called Fuerte, Spanish for "strong," growable in the coldest conditions ever tested on an avocado. It fell from favor after proving unable to ship even modest distances without bruising. "

10 " Four years to the day after Fairchild's 1908 gift of the trees to Washington's schools, on March 27, 1912, Mrs. Taft broke dirt during the private ceremony in West Potomac Park near the banks of the Potomac River. The wife of the Japanese ambassador was invited to plant the second tree. Eliza Scidmore and David Fairchild took shovels not long after. The 3,020 trees were more than could fit around the tidal basin. Gardeners planted extras on the White House grounds, in Rock Creek Park, and near the corner of Seventeenth and B streets close to the new headquarters of the American Red Cross. It took only two springs for the trees to become universally adored, at least enough for the American government to feel the itch to reciprocate. No American tree could rival the delicate glamour of the sakura, but officials decided to offer Japan the next best thing, a shipment of flowering dogwoods, native to the United States, with bright white blooms.
Meanwhile, the cherry blossoms in Washington would endure over one hundred years, each tree replaced by clones and cuttings every quarter century to keep them spry. As the trees grew, so did a cottage industry around them: an elite group of gardeners, a team to manage their public relations, and weather-monitoring officials to forecast "peak bloom"---an occasion around which tourists would be encouraged to plan their visits. 14 " The coast of Austria-Hungary yielded what people called cappuzzo, a leafy cabbage. It was a two-thousand-year-old grandparent of modern broccoli and cauliflower, that was neither charismatic nor particularly delicious. But something about it called to Fairchild. The people of Austria-Hungary ate it with enthusiasm, and not because it was good, but because it was there. While the villagers called it cappuzzo, the rest of the world would call it kale. And among its greatest attributes would be how simple it is to grow, sprouting in just its second season of life, and with such dense and bulky leaves that in the biggest challenge of farming it seemed to be how to make it stop growing. "The ease with which it is grown and its apparent favor among the common people this plant is worthy a trial in the Southern States," Fairchild jotted.
It was prophetic, perhaps, considering his suggestion became reality. Kale's first stint of popularity came around the turn of the century, thanks to its horticultural hack: it drew salt into its body, preventing the mineralization of soil. Its next break came from its ornamental elegance---bunches of white, purple, or pink leaves that would enliven a drab garden.
And then for decades, kale kept a low profile, its biggest consumers restaurants and caterers who used the cheap, bushy leaves to decorate their salad bars. Kale's final stroke of luck came sometime in the 1990s when chemists discovered it had more iron than beef, and more calcium, iron, and vitamin K than almost anything else that sprouts from soil. That was enough for it to enter the big leagues of nutrition, which invited public relations campaigns, celebrity endorsements, and morning-show cooking segments. American chefs experimented with the leaves in stews and soups, and when baked, as a substitute for potato chips. Eventually, medical researchers began to use it to counter words like "obesity," "diabetes," and "cancer." One imagines kale, a lifetime spent unnoticed, waking up one day to find itself captain of the football team. "
